I've been out of town for 11 days for a certification course, which created some issues with staying on plan while eating, especially since a lot of the meals were provided to us by vendors. 12 hours of sitting in a classroom for 9 days can lead one to make some not great food decisions!
So now that I'm back home, my body is seriously ready to get back on track with my nutrition. I've been craving some veggies, so this recipe popped out while I was browsing Pinterest. The creamy onion sauce topping the roasted veggies and rice really rounded out the dish. I highly recommend this recipe! One of My favorite way to eat veggies is to roast them because it caramelizes them and brings out such great flavor. As an added bonus, it's a healthy and quick weeknight option when your time is tight. Inspiration came from Together As A Family, but I cleaned it up a bit and changed some seasonings to what I had on hand. If you like it with more kick and some Mexican flare, add some chili powder and paprika! Enjoy!
Ingredients: 1 lb ground turkey 1 onion 1 can black beans 1 cup frozen corn 1 8 oz can tomato sauce 1 tsp salt 1/2 tsp black pepper 1 tsp cumin 1/2 tsp garlic powder 1/2 tsp onion powder 1/2 tsp oregano 1 tsp gelatin 14 oz beef broth Instructions: Start your rice first in the instant pot or rice cooker. See below for instant pot instructions. Brown the ground turkey and add onion, black beans, frozen corn, tomato sauce and beef broth. In a small bowl, mix together salt, pepper, cumin, garlic powder, onion, oregano and gelatin and then add to turkey mixture. Let simmer for at least 25 minutes while your rice is cooking to reduce the liquid and thicken. Serve over your rice and add toppings! Instant Pot brown rice 1:1 ratio brown rice to water/beef broth, set to manual for 23 minutes with pressure release once time is up. I fell in love with this dressing from Trader Joe's and wanted to recreate it because spending $3.69 a week on salad dressing is more than I wanted to spend!
So I am working on recreating it! The recipe I made tonight isn't exact but this one was pretty tasty!
