Most mornings I don't cook anything special for breakfast, I just whip up an easy shake. Occasionally, I like to switch things up but still keep it simple. Today I whipped up some easy egg cups. They are super modifiable to fit your taste, an easy way to get in a lot of veggies, and eggs have great protein and healthy fat.
These particular egg cups I used kale and yellow bell peppers as my veggies, threw in some shredded sweet potato for a healthy carb, and crumbled up some turkey bacon for a nice little crunch. I also added just a bit of milk and cheese but if you're avoiding dairy these are easily left out. I set my oven to 375 degrees and baked until done.
